Ingredients for 4 servings:
1. 2 tablespoons brown sugar
2. 1 tablespoon cornstarch
3. 1/4 teaspoon salt
4. 8 ounces pineapple tidbits
5. 1 teaspoon butter
6. 2 tablespoons lemon juice
7. 1 (16 ounce) can sliced beets
Directions:
1. Drain sliced beets and cut into half pieces Set aside.
2. In a medium saucepan combine sugar, cornstarch and salt. Stir in pineapple and juice. Cook on low heat, stirring constantly until mixture thickens and bubbles.
3. Add butter, lemon juice and beets. Cook an additional 5 minutes until heated through.
4. Serve and enjoy!
