Ingredients for 4 servings:
1. 1 cup acini di pepe pasta
2. 3 tablespoons lemon juice
3. 2 tablespoons butter
4. 1 teaspoon fresh lemon zest
5. 1/2 cup zucchini, grated
Directions:
1. Cook the pasta in plenty of boiling salted water. Drain.
2. Add the lemon juice, butter, zucchini and zest to the pasta. Stir gently. Serve hot.
