Apricot Glazed Brussels Sprouts

 

Ingredients for 4 servings:
1. 1 (500 g) package frozen Brussels sprouts
2. 1/4 cup reduced sugar apricot jam
3. 1 1/2 teaspoons chopped fresh dill (or 1/2 tsp dried)
4. 1 1/2 teaspoons lemon juice
5. 1/2 cup sliced water chestnuts, drained
6. 2 tablespoons unsalted cashews or 2 tablespoons blanched almonds, toasted

Directions:
1. Cook Brussels sprouts for 5-8 minutes. Drain well. Meanwhile, in a small saucepan; combine remaining ingredients, except cashews. Cook over low heat 5 minutes or until heated through. Stir occasionally. Pour over Brussels sprouts; stir gently to coat. Sprinkle with cashews.
