Asparagus Pasta

 

Ingredients for 6 servings:
1. 1/4 cup olive oil
2. 1 cup mushroom, sliced
3. 1/2 cup green onion, chopped
4. 4 garlic cloves, minced
5. 1/2 cup olive (black or green)
6. 1 cup diced tomato
7. 2 cups asparagus, steamed and cut on diagonal
8. 1 1/2 cups vegetable stock
9. 1/2 cup marsala wine
10. 1 tablespoon cornstarch
11. 1 tablespoon cold water
12. 1 tablespoon italian seasoning
13. 1 teaspoon salt
14. 1/2 teaspoon pepper
15. 16 ounces pasta (fusilli)

Directions:
1. In a large skillet, over high heat, sauté the mushrooms, green onions, and garlic in the olive oil until tender.
2. Add the olives and tomatoes. Heat thoroughly.
3. Add cooked asparagus and dry spices, stirring constantly.
4. Add Marsala wine and bring up to a boil.
5. Add vegetable stock.
6. Mix corstarch with water and wisk until smooth.
7. Add cornstarch slurry to sauce and mix over high heat to thicken.
8. Pour over cooked pasta.
