Avocado Sandwiches

 

Ingredients for 1 servings:
1. 1 lb sliced bacon, halved
2. 2 medium ripe avocados, peeled
3. salt and pepper, to taste
4. 1/3 cup mayonnaise
5. 1 tablespoon lemon juice
6. 8 slices whole wheat bread, toasted

Directions:
1. Cook bacon until crisp, drain on paper towels.
2. Gently toss avocados with salt and pepper.
3. Combine mayonnaise and lemon juice and spread over toast.
4. Top with avocado and bacon and serve immediately.
