Ingredients for 1 servings:
1. 1 box yellow cake mix (I use Duncan Hines)
2. 1 can cherry pie filling
3. 1 (20 ounce) can crushed pineapple, undrained
4. 1/2 cup Crisco
5. 1 cup coconut flakes
6. Cool Whip, for topping
Directions:
1. Preheat oven to 350 Degrees F.
2. Melt Crisco in microwave.
3. In 13 X 9 inch cake pan, grease the bottom and sides, and mix cherries and pineapples together in pan.
4. Sprinkle cake mix over top completely.
5. Sprinkle melted shortening on top, and put coconut on.
6. Bake in oven for one hour or until top is golden brown.
7. Great with Cool Whip.
