Black & White Vegetarian Chipotle Chili (Crock Pot)

 

Ingredients for 4 servings:
1. 1 (15 ounce) can black beans, drained and rinsed (or 1 1/2 – 2 cups cooked beans)
2. 1 (15 ounce) can navy beans, drained and rinsed (or 1 1/2 – 2 cups cooked beans)
3. 1 (14 1/2 ounce) can diced tomatoes
4. 1 (14 1/2 ounce) can diced tomatoes and green chilies or 1 (14 1/2 ounce) can diced tomatoes with jalapenos
5. 1 cup onion, chopped
6. 6 garlic cloves, minced
7. 2 tablespoons chili powder
8. 1 tablespoon sweet Hungarian paprika
9. 1 tablespoon dried cilantro
10. 1/2 teaspoon fresh coarse ground black pepper
11. 1 teaspoon chipotle chile, minced

Directions:
1. Stir everything together in a 4 1/2 quart or larger slow cooker.
2. Set power to low and cook for 6 hours or longer (we usually let this cook for 10 hours).
3. Serve with cheese or sour cream if you wish.
