Cheese Crusted Cauliflower

 

Ingredients for 4 servings:
1. 2 tablespoons butter
2. 3 cups cauliflower florets (about one small head)
3. 1 garlic clove, minced
4. 1/4 teaspoon salt
5. 1/8 teaspoon ground nutmeg
6. 1/3 teaspoon black pepper
7. 2 tablespoons water
8. 1/2 cup finely shredded swiss cheese

Directions:
1. Preheat broiler.
2. In a large ovenproof skillet melt butter over medium heat. Add cauliflower, garlic, salt, nutmeg, and pepper. Cook and stir for 5 minutes.
3. Carefully add water; reduce heat, cover and cook about 5 minutes more until cauliflower is crisp-tender.
4. Remove from heat. Sprinkle with Cheese.
5. Broil 4-5 inches from the heat for 4-5 minutes or until cheese is browned.
