Ingredients for 4 servings:
1. 3 lbs chicken pieces
2. 1 lime, juice of (about 2 tablespoons)
3. salt
4. pepper
5. 1/4 cup oil
6. 1 large onion, sliced
7. 1 green bell pepper, chopped
8. 1 1/2 cups pitted ripe olives
9. 1 1/2 cups orange juice
10. 1/2 cup toasted slivered almonds
Directions:
1. Combine chicken and lime juice and marinate for 30 minutes.
2. Lightly season chicken with salt and pepper.
3. Heat oil in a large skillet.
4. Add chicken and brown on all sides.
5. Add onion, pepper, olives and orange juice.
6. Reduce heat, cover and simmer 30 minutes, or until chicken is tender and cooked through.
7. Remove chicken to a serving platter and pour the pan juices over it.
8. Top with almonds.
