Ingredients for 1 servings:
1. 2 slices sun-dried tomato italian bread
2. 50 g baby spinach leaves
3. 1 teaspoon olive oil
4. 1 tablespoon raisins
5. 25 g light soft cheese (cream cheese)
Directions:
1. Lightly toast bread slices. In a small saucepan, wilt spinach leaves with olive oil. Season with salt and pepper and stir in raisins. Place on top of toast and top with light soft cheese.
