Classic Beef Stew, Our Family Favorite

 

Ingredients for 6 servings:
1. 2 lbs stew meat
2. 3 tablespoons flour
3. salt
4. pepper
5. 2 tablespoons olive oil
6. 2 tablespoons tomato paste
7. 2 teaspoons Worcestershire sauce
8. 1 1/2 cups red wine
9. 3 cups beef stock
10. 1 bay leaf
11. 1 teaspoon thyme
12. 1/2 teaspoon garlic powder
13. 1/2 teaspoon onion powder (or 1 tsp dried onion)
14. 1 onion, chopped in large pieces
15. 3 carrots, peeled and chopped (large)
16. 1 stalk celery, chopped (large)
17. 8 ounces mushrooms, sliced
18. 2 cups potatoes, peeled and large dice

Directions:
1. preheat the oven to 350.
2. toss meat with flour, salt and pepper.
3. heat oil in a dutch oven and brown meat in 2-3 batches
4. return all meat to the pot and add tomato paste.
5. add wine, stock, worchesteshire sauce, and spices, scraping the brown bits from the bottom of the pot.
6. bring to a boil, cover and put in the oven for 2 hours.
7. add vegetables and more stock if necessary, bring back to a boil, cover and return to the oven for another hour.
8. remove bay leaf and serve! we like ours with good crusty bread and a green salad.
