Cornmeal Cakes

 

Ingredients for 4 servings:
1. 3 eggs
2. 3 cups milk
3. 1 teaspoon vanilla
4. 2 cups cornmeal
5. 1 teaspoon baking soda
6. 1 teaspoon salt
7. 1 tablespoon sugar
8. 2 tablespoons butter
9. 2 cups flour
10. 1/2 teaspoon baking powder

Directions:
1. Beat eggs together in a bowl, then stir in milk and vanilla.
2. Add remaining ingredients and stir 1 minute until smooth.
3. Heat griddle over medium heat. Fry cornmeal mixture like pancakes and serve with syrup or preserves.
