Ingredients for 2 servings:
1. 1 1/2 teaspoons butter or 1 1/2 teaspoons olive oil
2. 1 shallot, minced
3. 1 cup chicken broth or 1 cup vegetable broth
4. 3/4 cup couscous
5. 1/3 cup fresh corn or 1/3 cup thawed frozen corn
6. 1/4 teaspoon pepper
7. 1 pinch cayenne
8. 1/8 teaspoon salt
Directions:
1. Melt butter in saucepan.
2. Add shallot and saute 1 to 2 minutes, or until tender.
3. Add chicken broth and bring to a boil.
4. Add couscous, corn, pepper, cayenne and salt.
5. Cover; remove from heat and set aside 5 minutes.
6. Fluff with a fork.
