Ingredients for 1 servings:
1. 3/4 cup butter, softened
2. 2 cups flour
3. 3/4 cup quick oats
4. 3/4 cup brown sugar
5. 12 ounces cream cheese (1 1/2 packages)
6. 1 1/4 cups white sugar
7. 2 large eggs, room temperature
8. 1/2 teaspoon cinnamon (or more to taste!)
9. 1/4 teaspoon nutmeg
10. 3 cups rhubarb, chopped
Directions:
1. Preheat oven to 350°F.
2. Combine butter, flour, oats and brown sugar until crumbly.
3. Press 1/2 the mixture into bottom of 9×13 baking pan.
4. Beat cream cheese, white sugar, eggs, cinnamon and nutmeg in a large mixing bowl. Stir in rhubarb.
5. Pour over prepared crust.
6. Sprinkle with remaining reserved topping.
7. Bake for 40-45 minutes. Cool and refrigerate.
8. Serve cool.
