Ingredients for 4 servings:
1. 1 tablespoon oil
2. 1 cup onion, chopped
3. 2 cloves garlic, crushed
4. 2 tablespoons curry powder
5. 4 cups chicken broth
6. 2 1/2 cups water
7. 2 cups canned tomatoes, chopped
8. 2 cups lentils
9. 1 cup carrot, finely chopped
10. 1 cup parsley, chopped
11. salt and pepper
Directions:
1. Saute onion and garlic until soft.
2. Stir in curry powder and mx well.
3. Add all the rest of the ingredients except the parsley.
4. And simmer covered until cooked through (about 45 minutes).
5. Stir in parsley and simmer 5 more minutes.
