Ingredients for 6 servings:
1. 1/2 lb sausage, Bob Evans original roll
2. 1 cup potato, cooked and diced
3. 3 tablespoons bell peppers, chopped
4. 3 tablespoons onions, chopped
5. 2 tablespoons milk
6. 6 eggs
7. salt and pepper, to taste
Directions:
1. Stovetop:.
2. Crumble sausage into frying pan.
3. Add potatoes, pepper and onion.
4. Cook slowly until meat is no longer pink.
5. Beat eggs and combine with milk.
6. Add to sausage mixture and cook, stirring occasionally to fluff eggs, until eggs have thickened.
7. Refrigerate leftovers.
8. Microwave:
9. In 2-quart glass casserole, crumble sausage and microwave on 100% power (high) for two minutes.
10. Stir to break-up sausage.
11. Stir in potatoes, peppers and onions.
12. Microwave two minutes on 100% power (high).
13. Beat eggs and combine with milk.
14. Add to sausage mixture.
15. Microwave 3 to 4 minutes on 100% power (high), stirring after each minute until eggs are set.
