Ingredients for 8 servings:
1. 2 pints cherry tomatoes
2. 1/2 lb feta cheese, crumbled (about 2 cups)
3. 1/4 cup extra virgin olive oil
4. 1/4 cup balsamic vinegar
5. salt, to taste
6. pepper, to taste
7. fresh thyme sprig, for garnish
Directions:
1. In medium bowl, toss the tomatoes with the feta.
2. Drizzle with olive oil and balsamic vinegar.
3. Season to taste with salt and pepper; top with thyme.
