Ingredients for 6 servings:
1. 26 ounces canned chicken breasts, drained
2. 1 onion, chopped
3. 1 cup uncooked rice
4. 1 cup chopped celery
5. 1 cup light sour cream
6. 1 (10 3/4 ounce) can low-fat cream of mushroom soup
7. 3 tablespoons reduced sodium soy sauce
8. 2 tablespoons chopped pimiento
9. 1/2 cup sliced almonds
Directions:
1. Mix all ingredients together in 9X13 pan.
2. Bake at 350 degrees for 1 hour or until rice is done.
