Edamame Dip

 

Ingredients for 8 servings:
1. 1 1/2 cups frozen shelled edamame, thawed and cooked (green soybeans)
2. 1/2 cup water
3. 1/4 cup chopped red onion
4. 3 tablespoons chopped fresh cilantro
5. 2 tablespoons rice vinegar
6. 1 tablespoon olive oil
7. 1/2 teaspoon salt
8. 1 1/2 teaspoons chili-garlic sauce (such as Lee Kum Kee)
9. 1 (16 ounce) can cannellini beans or 1 (16 ounce) can other white beans, drained

Directions:
1. Place all ingredients in a food processor, and process until smooth.
2. Serve immediately, or cover and chill.
