Ingredients for 6 servings:
1. 1 lb eggplant, peeled and cut into 1/2 ” cubes
2. 1 (16 ounce) can tomatoes
3. 2 garlic cloves, minced
4. 1/4 cup onion, minced
5. 1/4 teaspoon chili powder, more if desired
6. 1 dash pepper
Directions:
1. Combine all ingredients in a skillet.
2. simmer gently 15- 20 minutes or until eggplant is tender.
3. Can be done ahead and reheated in microwave.
