Ingredients for 1 servings:
1. 1 cup icing sugar
2. 2 cups butter
3. 3 1/2 cups flour
4. 1 cup rice flour
5. 2 tablespoons sugar
Directions:
1. Cream icing sugar and butter until fluffy.
2. Combine flours and add to the butter mixture, in small portions.
3. Turn batter out into a sided 15 x 9 cookie pan or jelly roll pan. Press to the sides and smooth with the back of a spoon.
4. Score into bars with a sharp knife and prick the surface with a fork. Sprinkle with the 2 tbsp of sugar.
5. Bake 10 minutes at 350°, then lower the oven to 300°. Bake for 30 – 40 minutes.
6. Remove from oven and immediately cut along the scored lines.
7. Cool, then store in an airtight container.
