Ingredients for 12 servings:
1. 1 cup milk
2. 2 eggs
3. 2 tablespoons olive oil
4. 1 cup brown sugar
5. 3/4 applesauce
6. 1 teaspoon cinnamon
7. 1 teaspoon vanilla
8. 3 cups pancake mix
9. 1 (15 ounce) can fruit cocktail, drained
10. shortening
11. powdered sugar
Directions:
1. Preheat oven to 350.
2. Mix milk, eggs, oil, sugar, applesauce, cinnamon and vanilla until smooth. Mix in pancake mix, one cup at a time. Cut fruit into smaller pieces.
3. Grease a bundt pan with shortening. Pour half the batter into pan.
4. Layer half the fruit over batter. Pour remaining batter over top and sprinkle with remaining fruit.
5. Bake 45-50 minutes. Invert onto a plate.
6. Once cooled, sprinkle powdered sugar over top.
