Ingredients for 1 servings:
1. 3 garlic cloves, thinly sliced
2. 1 tablespoon olive oil
3. 1 cup dry long grain white rice
4. 2 cups water
5. 2 tablespoons fresh lime juice
6. 1 teaspoon kosher salt
7. 2 tablespoons minced fresh cilantro
8. 2 teaspoons lime zest, minced
Directions:
1. Saute garlic in oil in a saucepan over mid-high until golden.
2. Stir in rice; sauté 2 minute.
3. Add water, lime juice, and salt bring to a boil. Cover, reduce heat to low, and simmer until water is absorbed, 20 minute
4. Stir in cilantro and lime zest.
