Garlic-Rosemary Mushrooms

 

Ingredients for 4 servings:
1. 1 ounce bacon, chopped (about 11/2 slices)
2. 1 1/2 lbs mixed mushrooms, such as cremini, button, shiitake (stemmed)
3. 2 medium garlic cloves, finely chopped
4. 1 1/2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried rosemary
5. 1/4 teaspoon salt
6. fresh ground pepper
7. 1/4 cup dry white wine

Directions:
1. Cook bacon in a large skillet over medium heat until just beginning to brown, about 4 minutes.
2. Add mushrooms, garlic, rosemary, salt and pepper and cook, stirring occasionally, until almost dry, 8 to 10 minutes.
3. Pour in wine and cook until most of the liquid has evaporated, 30 seconds to 1 minute.
