Grecian Tomatoes

 

Ingredients for 6 servings:
1. 4 medium tomatoes, cut into 1/4 inch slices
2. 1 small red onion, thinly sliced and separated into rings
3. 3/4 cup feta cheese, crumbled
4. 1/4 cup fresh parsley, minced
5. 1/2 teaspoon salt
6. 1/2 teaspoon fresh coarse ground black pepper
7. 1 tablespoon olive oil

Directions:
1. Arrange tomato and onion slices on a plate.
2. Sprinkle with the feta cheese, parsley, salt and pepper.
3. Drizzle with oil.
4. Cover and refrigerate for 15 minutes.
