Greek Meatloaf

Ingredients for 8 servings:
1. 1 lb ground beef
2. 1 lb ground lamb
3. 2 large eggs
4. 1 cup fresh breadcrumb
5. 1 cup green onion, finely chopped
6. 4 ounces feta cheese, finely crumbled
7. 1/4 cup fresh parsley, chopped
8. 1 tablespoon dried mint
9. 2 tablespoons olive oil
10. 1 tablespoon red wine vinegar
11. 2 garlic cloves, minced
12. 1/2 cup olive, chopped (green or black)
13. 1 tablespoon tomato paste (puree)
14. 1/2 teaspoon salt
15. 1/4 teaspoon ground black pepper

Directions:
1. Preheat oven to 350°F
2. In large bowl, mix all ingredients just until well combined but not overmixed.
3. In 13×9 metal baking pan, shape meat mixture into 9×5 inch loaf.
4. Bake meat loaf 1 hour approx, drain fat half way through cooking, if needed.
5. Let stand 10 minutes before slicing.
