Ingredients for 1 servings:
1. 1 cup all-purpose flour
2. 1/4 cup cake flour
3. 2 tablespoons cake flour
4. 3/4 cup whole wheat flour
5. 1/2 teaspoon baking soda
6. 3/4 teaspoon baking powder
7. 1/2 teaspoon salt
8. 1/2 cup butter flavor shortening, room temp
9. 1/2 cup brown sugar
10. 1/2 cup honey
11. 1 egg
12. 1 egg yolk
13. 1 cup dried apricot, chopped
14. 1/2 cup sunflower seeds
Directions:
1. Preheat oven to 300.
2. Cream shortening and brown sugar. Mix in eggs. Add vanilla and honey.
3. Mix flours, baking soda, baking powder, and salt. Fold into wet ingredients until just mixed. Add apricots and sunflower seeds.
4. With wet hands roll about a tablespoon of cookie dough into a ball. Bake cookies for 20 minutes til edges are a little brown.
