Ingredients for 4 servings:
1. 1/3 cup celery, chopped
2. 3 tablespoons light mayonnaise
3. 2 tablespoons Dijon mustard
4. 2 teaspoons lime juice
5. 1/2 teaspoon fresh coarse ground black pepper
6. 1 (12 ounce) can tuna in water, drained
7. 4 English muffins, split and toasted
8. 1 tomatoes, cut into 8 slices
9. 2 ounces low-fat swiss cheese, shredded (about 1/2 cup)
Directions:
1. Preheat broiler.
2. Combine first 6 ingredients and spread 3 tablespoons of the mixture on each muffin half.
3. Top each half with 1 tomato slice and 1 tablespoon cheese.
4. Broil 5 minutes or until the cheese is melted.
