Ingredients for 5 servings:
1. 3 teaspoons vegetable oil
2. 1 lb sirloin, tips
3. 2 tablespoons all-purpose flour
4. 1 small onion, chopped
5. 2 cups fresh mushrooms, sliced
6. 6 garlic cloves, minced
7. 1 (6 ounce) can tomato paste
8. 2 cups beef broth
9. 1 tablespoon brown sugar
10. 1 (12 ounce) bottle Guinness stout
11. 4 cups carrots, sliced
12. 2 potatoes, peeled and diced
Directions:
1. Heat 2 tsp oil in large skillet over medium-high heat.
2. Coat tips with flour, shaking off excess.
3. Cook until browned on both sides and remove from heat.
4. In a large pot, add 1 tsp oil, mushrooms, and onion; cook stirring constantly until onion is tender (about 3 min).
5. Add meat to pot, stir in garlic, tomato paste, beef broth, sugar, beer, carrots, and potatoes-cover and simmer over low heat for about 1 hr or until thickened.
6. Season to taste with salt in pepper.
