Ingredients for 6 servings:
1. 1 cup chopped onion
2. 1 garlic clove, minced
3. 1 tablespoon margarine
4. 1 teaspoon curry powder
5. 1/2 teaspoon allspice
6. 1/4 teaspoon crushed red pepper flakes
7. 1 (15 ounce) can navy beans, drained and rinsed
8. 2 (15 ounce) cans red kidney beans, drained and rinsed
9. 1 1/2 cups diced peaches
10. 1/2 cup coarsely chopped mixed fruit
11. 1/2 cup mango chutney
12. 1/2-3/4 cup peach nectar
13. 3 tablespoons cider vinegar
Directions:
1. Saute onion and garlic in margarine until tender, about 5 minutes.
2. Stir in curry powder, allspice and crushed red pepper; cook 1-2 minutes longer.
3. Mix all ingredients in a 2 1/2 quart casserole. Bake, uncovered, at 350 degrees for 30 minutes.
