Ingredients for 4 servings:
1. 2 cups chicken stock
2. 1 cup long grain rice
3. 1 (10 ounce) package spinach, thawed and squeezed dry (or fresh equivalent)
4. 1/2 lb cooked bacon, crumbled
5. 1 cup sour cream, onion dip
6. 1 1/2 cups grated cheese (cheddar or swiss)
7. salt & pepper
8. grating nutmeg
Directions:
1. Cook rice in stock until tender.
2. Mix rice,spinach, bacon, dip and 1/2 the cheese and seasonings.
3. Place in a 1 1/2 qt casserole that has been sprayed with cooking spray.
4. Top with rest of cheese.
5. Bake 20 -30 min at 350F until cheese is melted.
