Ingredients for 6 servings:
1. 1 cup long grain white rice
2. 1 tablespoon olive oil
3. 4 garlic cloves, finely chopped
4. 1/2 cup raisins
5. 1/2 cup golden raisin
6. 1 lb spinach leaves, washed dried, and coarsely chopped (or 10 oz frozen spinach thawed)
7. 1 medium red bell pepper, thinly sliced
8. 1/2 cup feta cheese, crumbled
9. 1/2 teaspoon pepper
10. salt
Directions:
1. Cook rice according to package directions, omitting oil and salt.
2. Heat a large skillet or wok over medium heat.
3. Add oil and garlic.
4. Stir until garlic is light golden brown, about 2 minutes.
5. Add raisins and cook for 1 minute.
6. Add spinach 1/3 at a time, tossing quickly just until each addition begins to wilt.
7. Add cooked rice, red bell pepper, feta cheese, and pepper.
8. Stir briefly to combine and season with salt to taste.
