Ingredients for 6 servings:
1. 4 cups grated carrots
2. 3 tablespoons lemon juice
3. 2 tablespoons olive oil
4. 3/4 teaspoon ground coriander
5. 1 pinch salt
6. 2 -3 tablespoons chopped of fresh mint
7. 2 -3 tablespoons chopped fresh coriander
8. 1 teaspoon maple syrup
Directions:
1. Mix all ingredients together and chill for at least 1 hour.
