Ingredients for 6 servings:
1. 8 ounces buffalo mozzarella
2. 5 plum tomatoes, deseeded and roughly chopped
3. 1 red chili pepper, deseeded and finely chopped
4. 1 small red onion, very finely chopped
5. 1 tablespoon sun-dried tomato paste
6. 2 tablespoons fresh parsley, chopped
7. 2 tablespoons fresh basil, chopped
8. 1 tablespoon lime juice
9. salt and pepper, to taste
10. 3 tablespoons extra virgin olive oil (plus extra for drizzling)
Directions:
1. Slice the mozzarella and arrange in slightly overlapping circles on a serving platter.
2. Put all the remaining ingredients in a bowl and mix thoroughly.
3. Spoon the salsa over the mozzarella.
4. Drizzle over some olive oil.
5. Serve alone or with crusty Italian bread.
