Parmesan Herbed Orzo

 

Ingredients for 4 servings:
1. 2 1/2 cups orzo pasta
2. 1 garlic clove, minced
3. 1/4 cup chopped red onion
4. 1/4 cup freshly chopped fresh parsley leaves
5. 1 lemon, zested and juiced
6. 1 tablespoon olive oil
7. 1/4 cup freshly grated parmesan cheese
8. 1/2 teaspoon salt
9. 1/2 teaspoon fresh ground black pepper

Directions:
1. Cook orzo as directed on package.
2. In a large bowl, toss together orzo with remaining ingredients. Can be served warm or chilled.
