Pasta With Spinach & Ricotta

 

Ingredients for 6 servings:
1. 3 tablespoons unsalted butter
2. 1/4 cup pine nuts
3. 1 cup ricotta cheese
4. 1 (250 g) package frozen chopped spinach, cooked and water squeezed out
5. 1 garlic clove, minced
6. 5 -6 basil leaves, chopped
7. 1 lb penne
8. salt, to taste
9. pepper, to taste
10. nutmeg, to taste
11. 3 tablespoons parmesan cheese

Directions:
1. Boil pasta in salted water until firm but cooked. Place in bowl.
2. In sausepan, melt butter, sautee pine nuts until they just brown,add garlic and cook 1 minute.
3. Add spinach and salt,pepper, and nutmeg to taste.
4. Mix sauce into pasta, add Riccota and basil.
5. Adjust seasonings to taste.
6. Sprinkle with Parmesan cheese, and serve at once.
