Ingredients for 12 servings:
1. 7 cups Italian bread, cubed
2. 16 ounces frozen peppers and onions, stir-fry blend
3. 3/4 lb cooked beef, cut into strips
4. 2 cups shredded monterey jack cheese
5. 8 eggs
6. 2 1/4 cups milk
7. 2 tablespoons Dijon mustard
8. 1/2 teaspoon pepper
9. 1/2 teaspoon salt
Directions:
1. Place a third of the bread cubes in a greased 13 x 9 inches baking dish. Layer with a third of the pepper/onion blend, roast beef, and cheese. Repeat layers twice.
2. In a large bowl, whisk the eggs, milk, mustard, salt and pepper, pour over the top.
3. Cover and refrigerate for 8 hours or overnight.
4. Remove from refrigerator 30 minutes before baking.
5. Bake, covered at 325 for 1 hour.
6. Uncover and bake 15-20 minutes longer or until a knife inserted in the middle comes out clean. let stand for 10 minutes before serving.
