Ingredients for 4 servings:
1. 1/2 cup extra virgin olive oil
2. 2 ounces prosciutto, rough chop
3. 1 small white onion, minced
4. 1 lb fresh green peas or 1 lb frozen peas
5. salt & freshly ground black pepper
Directions:
1. Heat oil in a skillet over medium high heat; add prosciutto and onions and cook until onions soften and prosciutto begins to crisp, about 6 – 8 minute.
2. Add peas and 1 tablespoon water; cook and toss until hot, about 3 minutes.
3. Season with salt and pepper.
