Ingredients for 4 servings:
1. 8 large eggs
2. 1 tablespoon parsley, chopped
3. 1 teaspoon fresh chives, chopped
4. 1/2 cup gruyere cheese, grated
5. 1 tablespoon Dijon mustard
6. salt and black pepper
Directions:
1. place eggs, herbs, cheese and mustard in bowl, mix well.
2. heat butter in large nonstick frying pan over medium-low heat.
3. pour egg mixture into pan and cook for 1 minutes.
4. season, stir
5. keep stirring until eggs are done to desired consistency.
6. serve.
