Ingredients for 4 servings:
1. 2 lbs potatoes, cut in half if large
2. 6 ounces feta cheese marinated in oil, reserve 2 tbsp feta cheese oil
3. 1 teaspoon dried oregano
4. 8 tomatoes, roughly chopped
5. 4 ounces black olives, pitted
6. 8 ounces ham, sliced thick and cut into large chunks
7. 2 tablespoons chopped parsley
Directions:
1. boil potatoes in salted water until tender, drain.
2. heat feta cheese oil over low in a frying pan.
3. Add oregano and tomatoes and cook over medium heat for 3-4 minutes.
4. stir in olives, feta cubes and ham.
5. Stir well.
6. add cooked potatoes and heat thouroughly.
7. pour salad into a bowl and garnish with chopped parsley.
