Ravioli With Alfredo Sauce and Artichokes

 

Ingredients for 4 servings:
1. 1 (24 ounce) package frozen ravioli (meat or cheese filled)
2. 1 tablespoon olive oil
3. 2 garlic cloves, chopped
4. 1 (6 ounce) jar marinated artichokes, drained and sliced
5. 1 (12 ounce) jar roasted red peppers, cut into strips
6. 2 tablespoons chicken broth or 2 tablespoons white wine
7. 1 (26 ounce) jar low-fat alfredo sauce

Directions:
1. Prepare pasta according to package directions. Keep warm.
2. Heat oil in medium skillet over medium heat.
3. Add garlic; cook for 1 minute.
4. Add artichokes, peppers and wine.
5. Cook, stirring occasionally for 2 to 3 minutes.
6. Add pasta and sauce to pan.
7. Cook and stir for one minute.
8. Sprinkle with chopped parsley, if desired.
