Ingredients for 6 servings:
1. 1 large onion, coarsely chopped
2. 3 lbs ground beef
3. 2 garlic cloves, minced
4. 3 tablespoons ground hot red chili peppers
5. 2 tablespoons ground mild red chili peppers
6. 1 1/2 cups water
7. corn chips (for topping)
8. shredded monterey jack cheese (for topping)
9. shredded cheddar cheese (for topping)
Directions:
1. Combine the first 6 ingredients up to, and including water into a slow cooker.
2. Cover, and cook 8-10 hours, drain after cooking.
3. Serve over corn chips, and top with the cheese mixture.
