Ingredients for 6 servings:
1. 1 red bell pepper, chopped
2. 1/2 cup soymilk lite
3. 2 tablespoons tahini or 2 tablespoons smooth cashew butter
4. 1 tablespoon arrowroot
5. 1 teaspoon arrowroot
6. 1 pinch sea salt
7. 2 teaspoons dijon-style mustard
8. 1 pinch cayenne pepper
9. 1 tablespoon minced fresh basil or 1/2 teaspoon dried basil
Directions:
1. Place pepper, soy milk, tahini and arrowroot in a blender. Blend until smooth and creamy.
2. Pour mixture into a saucepan and bring to a boil while stirring constantly with a whisk.
3. Reduce heat to low and whisk in salt, mustard and cayenne pepper.
4. Sprinkle with basil and serve.
