Ingredients for 6 servings:
1. 4 cups roasted chopped chicken breasts
2. 1/4 cup chopped green onion
3. 1/4 cup chopped red bell pepper
4. 2 tablespoons minced parsley
5. 1/2 cup mayonnaise
6. 1/4 cup sour cream
7. 2 tablespoons lemon juice
8. 2 teaspoons Dijon mustard
9. salt & pepper, to taste
10. 8 ounces shredded cheddar cheese
11. 10 ounces potato chips, crushed
Directions:
1. In large bowl, combine chicken, green onion, bell pepper, and parsley.
2. In small bowl, whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, salt, & pepper.
3. Stir mayonnaise mixture into chicken mixture; mix well.
4. Pour into an 11×7 dish. Top with cheese & potato chips.
5. Bake 15 minutes, until bubbly.
