Ingredients for 4 servings:
1. 1 medium onion, finely chopped
2. 1/2 cup oil
3. 1 cup rice
4. 3 1/2 cups water
5. 3/4 cup pitted mediterranean olive
6. fresh ground black pepper
7. salt
Directions:
1. Soak olives in warm water for 2 hours. Braise onion in oil in large pan over medium heat.
2. Add rice and stir for a minute or two, until the rice is well covered with oil.
3. Add the water.
4. After 8-10 minutes, add the olives.
5. Finish cooking rice and allow to cool to room temperature.
6. Serve with freshly ground black pepper.
