Roasted Asparagus & Peppers With Feta

 

Ingredients for 4 servings:
1. 1 lb asparagus, trimmed
2. 1 red pepper, chopped
3. 1/4 cup light balsamic vinaigrette salad dressing
4. 2 tablespoons feta cheese, the type with Oregano, Sun Dried Tomatoes and Cracked Peppercorns Cheese

Directions:
1. Heat oven to 400ºF.
2. Arrange asparagus in row on foil-covered baking sheet. Sprinkle peppers onto bottom ends of spears.
3. Bake 20 minute or until vegetables are crisp-tender.
4. Top with dressing and cheese.
