Ingredients for 8 servings:
1. 2 lbs frozen hash browns
2. 16 ounces sour cream
3. 2 cups frozen chopped broccoli
4. 4 cups colby-monterey jack cheese (shredded)
5. 2 teaspoons salt (or less)
6. 2 teaspoons pepper (or less)
Directions:
1. Preheat oven to 350 degrees.
2. In a large bowl, combine hashbrowns, brocolli, salt and pepper until thoughroughly mixed.
3. Add sour cream and stir.
4. Spoon half of the mixture into 9 x 13 baking dish.
5. Top with half of the cheese.
6. Spoon remaining mixture on top and finish with a final layer of cheese.
7. Bake for 1 hour and 15 minute or until the center of casserole is hot.
