Rolled Oatmeal Cookies

Ingredients for 1 servings:
1. 1 1/2 cups old fashioned oats
2. 1 3/4 cups all-purpose flour
3. 1 teaspoon baking powder
4. 1 teaspoon baking soda
5. 1 cup butter
6. 1 cup granulated sugar
7. 1/2 cup firmly packed brown sugar
8. 1 egg, slightly beaten
9. 1 teaspoon vanilla
10. 1/2 cup flaked coconut

Directions:
1. Preheat oven to 375.
2. In a medium bowl combine rolled oats, flour, baking powder and baking soda.
3. Set aside.
4. In a large bowl, cream butter and sugars until fluffy; beat in egg until blended.
5. Add Vanilla and coconut, mix well.
6. Add dry ingredients and mix until just blended.
7. Shape into 2-inch balls and arrange on a baking sheet about 2 inches apart flatten with a fork.
8. Bake for 10 to 12 minutes.
