Ingredients for 4 servings:
1. 1/4 cup plain breadcrumbs
2. 2 tablespoons finely chopped fresh parsley
3. 1 garlic clove, minced
4. 1 tablespoon butter, melted
5. 1 teaspoon grated lemon zest
6. 1/2 teaspoon salt
7. 1/4 teaspoon black pepper
8. 1 1/4 lbs sea scallops
Directions:
1. Spray the rack of a broiler pan with nonstick spray and preheat the broiler.
2. Combine all ingredients except scallops in a large bowl then add the scallops and toss to cover.
3. Place the scallops on the broiler rack in a single layer and lightly spray with nonstick spray. Broil 4 inches from the heat until golden brown, about 4 min., (do NOT turn).
