Ingredients for 4 servings:
1. 1 tablespoon vegetable oil
2. 1 scallion (including tops)
3. 1 1/2 tablespoons curry powder
4. 1 cup coconut milk
5. 1 cup chicken broth
6. 2 cups sweet potatoes or 2 cups white potatoes
7. 3/4 lb large shrimp, cleaned
8. 2 teaspoons lime juice
9. 1 cup green peas
10. 2 tablespoons chopped fresh cilantro
Directions:
1. In skillet, heat oil until hot.
2. Saute scallion, about 1 minute. Stir in curry.
3. Whisk in coconut milk and broth; bring to a simmer.
4. Add potatoes; cook, partially covered until tender, about 10 minutes.
5. Add shrimp, lime juice, peas and chopped cilantro.
6. Simmer until shrimp are opaque and cooked through, about 3 minutes.
7. Serve with rice or whatever you desire.
